Ingredients:
- 2 cups (200 g) rolled oats, chopped in a blender (not too fine โ like coarse flour)
- 1 teaspoon baking powder
- 1 cup (240 ml) milk of your choice (almond, oat, dairy, etc.)
- 1 medium carrot, grated
- 1 apple, grated (with peel for extra fiber)
- 9 dried apricots, rinsed with hot water and finely chopped
- 4 tablespoons raisins, rinsed with hot water
Optional (but tasty):
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg or ginger
- 1 tablespoon chia seeds or ground flaxseed for extra nutrition
- A pinch of salt
Instructions:
- Preheat oven to 180ยฐC (350ยฐF). Grease a small baking dish or line with parchment paper.
- Mix dry ingredients: In a large bowl, combine the chopped oats, baking powder, and spices (if using).
- Add wet ingredients: Stir in milk, grated apple and carrot, chopped apricots, and raisins. Mix well.
- Let the mixture sit for 5โ10 minutes so the oats can absorb some liquid.
- Pour into baking dish and smooth the top.
- Bake for 30โ35 minutes, or until the top is golden and it feels firm in the center.
- Cool slightly before slicing. Enjoy warm or cold!
