- 1 cup almond flour
- 3 large eggs
- 1/4 cup avocado oil
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 ripe avocado, mashed
- Optional toppings: sesame seeds, everything bagel seasoning
🧑🍳 Instructions:
- Preheat oven to 175°C (350°F). Line a small loaf pan (8×4 inch) with parchment paper or grease it lightly.
- In a bowl, mash the ripe avocado until smooth.
- Add eggs and avocado oil to the mashed avocado. Whisk until fully combined.
- Stir in almond flour, baking soda, and salt. Mix until you get a smooth, thick batter.
- Pour the batter into the loaf pan and smooth the top with a spatula.
- Add toppings if desired — sprinkle sesame seeds or everything bagel seasoning over the top.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
- Cool completely before slicing for best texture.

- Store leftovers in the fridge for up to 5 days.
- Toast slices and top with cream cheese, smoked salmon, or more avocado!
