🥔 Stuffed Mashed Potato Nests

Simple, delicious, and comforting — with a cheesy, beefy filling!

Ingredients

For the mashed potato nests:

  • 3–5 large potatoes (about 2.2 lbs / 1 kg)
  • 3.5 tbsp (50 g) butter
  • A bunch of fresh dill, finely chopped
  • Salt, smoked paprika, black pepper, oregano (to taste)

For the meat filling:

  • 1.1 lbs (500 g) ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 large tomato, peeled and chopped (or grated)
  • 2.5 oz (70 g) tomato paste
  • A bunch of fresh parsley, chopped
  • 3.5 oz (100 g) shredded mozzarella cheese (for topping)

Instructions

1. Make the mashed potatoes:

  • Peel and cut the potatoes into chunks. Boil in salted water until fork-tender (15–20 minutes).
  • Drain and mash the potatoes while still hot.
  • Mix in the butter, chopped dill, and season with salt, black pepper, paprika, and oregano. Stir until smooth.
  • Let cool slightly, then place the mash into a piping bag or use a spoon to shape “nests” on a baking tray lined with parchment paper. Use a spoon to press down the centers to form a well.

2. Prepare the meat filling:

  • In a skillet, heat a little oil and sauté the onion until soft.
  • Add garlic and bell pepper; cook for another 2–3 minutes.
  • Add the ground beef and cook until browned.
  • Stir in tomato, tomato paste, salt, pepper, and herbs. Let simmer until thickened (10–15 minutes).
  • Turn off heat and mix in the fresh parsley.

3. Assemble the nests:

  • Preheat oven to 375°F (190°C).
  • Spoon the meat mixture into each potato nest.
  • Top each with shredded mozzarella cheese.

4. Bake:

  • Bake in the oven for 15–20 minutes or until the cheese is melted and golden.

Serving Tips

  • Serve hot with a side of green salad or roasted vegetables.
