(No Flour, No White Sugar, No Butter)
Ingredients:
- 1 cup oats (130 g)
- 1 cup natural yogurt (250 ml)
- 2 eggs
- 2 tbsp honey or maple syrup (about 50 g)
- 2 carrots (approx. 300 g, peeled and grated)
- 2 apples (approx. 320 g, peeled and grated)
- (Optional):
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder (for fluffiness)
- Chopped nuts or raisins (for texture)
🧑🍳 Instructions:
- Preheat Oven:
To 180°C (350°F). Grease or line a baking dish (about 20 cm or 8”). - Prep Fruit & Veg:
Grate carrots and apples, or pulse in a food processor until finely shredded. - Mix Wet Ingredients:
In a large bowl, whisk together the eggs, yogurt, and honey/maple syrup. - Add Dry Ingredients:
Stir in oats, grated carrots, and apples.
Add cinnamon, vanilla, and baking powder if using. - Rest the Batter:
Let sit for 10–15 minutes to allow oats to absorb the moisture. - Bake:
Pour batter into the dish and bake for 35–45 minutes, or until golden and set.
A toothpick in the center should come out clean. - Cool & Serve:
Cool before slicing. Enjoy warm or chilled.
