Ingredients:
For the Meatloaf:
2 lbs ground beef
1 cup breadcrumbs
2 eggs
½ cup milk
1 small onion, finely chopped
2 tsp garlic powder
1 tsp smoked paprika
1½ tsp salt
1 tsp black pepper
1½ cups sharp cheddar cheese (cut into small cubes or shredded)
For the BBQ Glaze:
½ cup barbecue sauce
2 tbsp brown sugar
1 tbsp ketchup
1 tsp Worcestershire sauce
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment or foil.
In a large bowl, mix ground beef, breadcrumbs, eggs, milk, onion, garlic powder, paprika, salt, and pepper until just combined.
Flatten mixture into a rectangle on parchment paper. Place cheddar cheese in the center and fold sides over to enclose, forming a loaf.
Transfer to baking sheet and bake for 30 minutes.
Meanwhile, whisk together BBQ glaze ingredients.
Remove meatloaf, brush generously with glaze, and return to oven for 15–20 more minutes or until internal temp hits 160°F (71°C).
Rest 10 minutes before slicing and serving.
