Simple, delicious, and comforting — with a cheesy, beefy filling!
Ingredients
For the mashed potato nests:
- 3–5 large potatoes (about 2.2 lbs / 1 kg)
- 3.5 tbsp (50 g) butter
- A bunch of fresh dill, finely chopped
- Salt, smoked paprika, black pepper, oregano (to taste)
For the meat filling:
- 1.1 lbs (500 g) ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 large tomato, peeled and chopped (or grated)
- 2.5 oz (70 g) tomato paste
- A bunch of fresh parsley, chopped
- 3.5 oz (100 g) shredded mozzarella cheese (for topping)
Instructions
1. Make the mashed potatoes:
- Peel and cut the potatoes into chunks. Boil in salted water until fork-tender (15–20 minutes).
- Drain and mash the potatoes while still hot.
- Mix in the butter, chopped dill, and season with salt, black pepper, paprika, and oregano. Stir until smooth.
- Let cool slightly, then place the mash into a piping bag or use a spoon to shape “nests” on a baking tray lined with parchment paper. Use a spoon to press down the centers to form a well.
2. Prepare the meat filling:
- In a skillet, heat a little oil and sauté the onion until soft.
- Add garlic and bell pepper; cook for another 2–3 minutes.
- Add the ground beef and cook until browned.
- Stir in tomato, tomato paste, salt, pepper, and herbs. Let simmer until thickened (10–15 minutes).
- Turn off heat and mix in the fresh parsley.
3. Assemble the nests:
- Preheat oven to 375°F (190°C).
- Spoon the meat mixture into each potato nest.
- Top each with shredded mozzarella cheese.
4. Bake:
- Bake in the oven for 15–20 minutes or until the cheese is melted and golden.
Serving Tips
- Serve hot with a side of green salad or roasted vegetables.
- These nests also work well as a party appetizer or brunch option.
