🍫 Flourless Chocolate Oat Muffins (Secretly Healthy!)
Ingredients:
- 1½ cups rolled oats
- 2 ripe bananas
- 1 egg
- ¼ cup unsweetened cocoa powder
- ¼ cup milk (dairy or plant-based)
- 1 tsp baking powder
Optional Add-ins:
- ¼ cup dark chocolate chips or chopped nuts
- 1 tsp vanilla extract
- A pinch of salt to enhance the flavor
- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- Blend oats in a blender or food processor until they resemble flour (or leave whole for more texture).
- Add bananas, egg, cocoa powder, milk, and baking powder to the blender. Blend until smooth.
- Stir in any add-ins if using.
- Scoop batter into muffin tins, filling about ¾ full.
- Bake for 15–20 minutes, or until a toothpick comes out clean.
- Cool for a few minutes before enjoying. Muffins firm up more as they cool!
Tips:
- Use very ripe bananas for natural sweetness.
- Want it vegan? Use a flax egg (1 tbsp ground flax + 3 tbsp water).
- Store leftovers in an airtight container for up to 4 days or freeze.
