🍫 Flourless Chocolate Oat Muffins (Secretly Healthy!)

Ingredients:

  • 1½ cups rolled oats
  • 2 ripe bananas
  • 1 egg
  • ¼ cup unsweetened cocoa powder
  • ¼ cup milk (dairy or plant-based)
  • 1 tsp baking powder

Optional Add-ins:

  • ¼ cup dark chocolate chips or chopped nuts
  • 1 tsp vanilla extract
  • A pinch of salt to enhance the flavor
  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. Blend oats in a blender or food processor until they resemble flour (or leave whole for more texture).
  3. Add bananas, egg, cocoa powder, milk, and baking powder to the blender. Blend until smooth.
  4. Stir in any add-ins if using.
  5. Scoop batter into muffin tins, filling about ¾ full.
  6. Bake for 15–20 minutes, or until a toothpick comes out clean.
  7. Cool for a few minutes before enjoying. Muffins firm up more as they cool!

Tips:

  • Use very ripe bananas for natural sweetness.
  • Want it vegan? Use a flax egg (1 tbsp ground flax + 3 tbsp water).
  • Store leftovers in an airtight container for up to 4 days or freeze.
