Ingredients:

  • 8 oz wide noodles (such as udon or fettuccine)
  • 1 lb ground pork (or beef)
  • 1 cup green beans, trimmed and cut into 1-inch pieces

  • 2 tablespoons oyster sauce
  • 1 tablespoon Shaoxing rice wine (or dry sherry)
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 scallions, thinly sliced (white and green parts separated)
  • Vegetable oil

Instructions:

  1. Cook the noodles: Cook the noodles according to package directions. Drain and set aside.
  2. Stir-fry the meat: Heat a tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the ground meat and stir-fry until browned. Drain off any excess fat.
  3. Add aromatics: Add the minced garlic and ginger and stir-fry for another minute until fragrant.
  4. Add green beans: Add the green beans and stir-fry for 2-3 minutes until slightly tender-crisp.
  5. Make the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, rice wine, sugar, and cornstarch.
  6. Combine: Pour the sauce over the meat and green beans. Stir well to coat everything evenly. Cook for 1-2 minutes, or until the sauce thickens.
  7. Add noodles: Add the cooked noodles to the wok and toss gently to combine with the sauce and meat.
  8. Garnish and serve: Stir in the sesame oil and the white parts of the scallions. Garnish with the green parts of the scallions before serving.

Notes:

  • You can adjust the amount of soy sauce and oyster sauce to your liking.
  • Other vegetables, such as mushrooms or carrots, can be added.
  • For a spicier dish, add a pinch of red pepper flakes or chili garlic sauce.
