🥔Stuffed Sweet Potatoes

with Spinach, Avocado, Mushroom & Feta

Ingredients

  • 2 large sweet potatoes
  • 1 cup baby spinach
  • ½ avocado, diced
  • ½ cup mushrooms, sliced
  • ¼ cup crumbled feta cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Bake the Sweet Potatoes
    Preheat oven to 400°F (200°C). Pierce sweet potatoes a few times with a fork and bake for 45–50 minutes, or until soft.
  2. Cook the Filling
    While the sweet potatoes bake, heat olive oil in a pan over medium heat.
    Sauté the mushrooms until browned (about 5–7 minutes).
    Add spinach and cook until wilted. Season lightly with salt and pepper.
  3. Prep the Potatoes
    Once baked, slice each sweet potato open lengthwise.
    Gently fluff the flesh with a fork to create space for the filling.
  4. Assemble
    Top each potato with the sautéed mushrooms and spinach, followed by diced avocado and crumbled feta.
  5. Serve
    Add a final pinch of salt and freshly ground black pepper. Serve warm and enjoy!
