with Spinach, Avocado, Mushroom & Feta
Ingredients
- 2 large sweet potatoes
- 1 cup baby spinach
- ½ avocado, diced
- ½ cup mushrooms, sliced
- ¼ cup crumbled feta cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Bake the Sweet Potatoes
Preheat oven to 400°F (200°C). Pierce sweet potatoes a few times with a fork and bake for 45–50 minutes, or until soft. - Cook the Filling
While the sweet potatoes bake, heat olive oil in a pan over medium heat.
Sauté the mushrooms until browned (about 5–7 minutes).
Add spinach and cook until wilted. Season lightly with salt and pepper. - Prep the Potatoes
Once baked, slice each sweet potato open lengthwise.
Gently fluff the flesh with a fork to create space for the filling. - Assemble
Top each potato with the sautéed mushrooms and spinach, followed by diced avocado and crumbled feta. - Serve
Add a final pinch of salt and freshly ground black pepper. Serve warm and enjoy!
