  • 1 cup almond flour
  • 3 large eggs
  • 1/4 cup avocado oil
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 ripe avocado, mashed
  • Optional toppings: sesame seeds, everything bagel seasoning

🧑‍🍳 Instructions:

  1. Preheat oven to 175°C (350°F). Line a small loaf pan (8×4 inch) with parchment paper or grease it lightly.
  2. In a bowl, mash the ripe avocado until smooth.
  3. Add eggs and avocado oil to the mashed avocado. Whisk until fully combined.
  4. Stir in almond flour, baking soda, and salt. Mix until you get a smooth, thick batter.
  5. Pour the batter into the loaf pan and smooth the top with a spatula.
  6. Add toppings if desired — sprinkle sesame seeds or everything bagel seasoning over the top.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
  8. Cool completely before slicing for best texture.

Tips:

  • Store leftovers in the fridge for up to 5 days.
  • Toast slices and top with cream cheese, smoked salmon, or more avocado!
