Stuffed Sweet Potatoes (Spinach, Avocado, Mushroom & Feta)

Ingredients:

  • 2 large sweet potatoes
  • 1 cup baby spinach
  • ½ avocado, diced
  • ½ cup mushrooms, sliced
  • ¼ cup crumbled feta cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Bake the sweet potatoes for 45–50 minutes, or until soft and tender.
  3. Sauté the mushrooms in olive oil over medium heat until browned (about 5–7 minutes).
  4. Add spinach to the pan and cook until wilted (about 2 minutes).
  5. Slice open the baked sweet potatoes and gently fluff the insides with a fork.
  6. Top with the sautéed spinach and mushrooms, diced avocado, and crumbled feta cheese.
  7. Season with salt and pepper. Serve warm.
