Ingredients:
- 2 large sweet potatoes
- 1 cup baby spinach
- ½ avocado, diced
- ½ cup mushrooms, sliced
- ¼ cup crumbled feta cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Bake the sweet potatoes for 45–50 minutes, or until soft and tender.
- Sauté the mushrooms in olive oil over medium heat until browned (about 5–7 minutes).
- Add spinach to the pan and cook until wilted (about 2 minutes).
- Slice open the baked sweet potatoes and gently fluff the insides with a fork.
- Top with the sautéed spinach and mushrooms, diced avocado, and crumbled feta cheese.
- Season with salt and pepper. Serve warm.
