Crustless Spinach, Onion & Feta Quiche

Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • ½ cup milk
  • ½ cup crumbled feta cheese
  • Salt and pepper, to taste

Preparation:

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Sauté onion in olive oil over medium heat until soft and translucent.
  3. Add spinach and cook until wilted. Remove from heat.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Stir in the cooked onion, spinach, and feta cheese.
  6. Pour the mixture into the prepared pie dish.
  7. Bake for 30–35 minutes, or until the center is set and the top is golden.
  8. Cool slightly before slicing. Serve warm or chilled.
