Ingredients:
- 1 tbsp olive oil
- 1 small onion, diced
- 1 cup fresh spinach, chopped
- 4 large eggs
- ½ cup milk
- ½ cup crumbled feta cheese
- Salt and pepper, to taste
Preparation:
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
- Sauté onion in olive oil over medium heat until soft and translucent.
- Add spinach and cook until wilted. Remove from heat.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Stir in the cooked onion, spinach, and feta cheese.
- Pour the mixture into the prepared pie dish.
- Bake for 30–35 minutes, or until the center is set and the top is golden.
- Cool slightly before slicing. Serve warm or chilled.
