Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon butter
5 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh chopped parsley for garnish (optional)
For the Mashed Potatoes:
2 pounds potatoes, peeled and cubed
1/2 cup milk (or heavy cream for richer texture)
1/4 cup butter
Salt and pepper to taste
Directions:
In a large skillet, heat olive oil and butter over medium heat.
Season chicken breasts with salt, pepper, and Italian seasoning, then sear 5–6 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add minced garlic and sauté for 1 minute.
Pour in chicken broth and heavy cream, scraping up any browned bits from the pan.
Stir in Parmesan cheese and simmer for 5–7 minutes until thickened.
Return chicken to the skillet and spoon sauce over the top. Simmer for 2–3 minutes.
For the Mashed Potatoes:
- Boil potatoes in salted water until tender (about 15–20 minutes).
- Drain and mash with butter, milk (or cream), salt, and pepper until smooth and fluffy.
Serve creamy garlic chicken over a generous bed of mashed potatoes, topped with sauce and fresh parsley.
