Ingredients:
For the Garlic Butter Steak Bites:
1 lb (450g) sirloin steak, cut into bite-sized cubes
4 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp olive oil
1 tsp smoked paprika
Salt and pepper to taste
1 tbsp chopped parsley (for garnish)
For the Creamy Spaghetti:
8 oz (225g) spaghetti
1 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 tsp ground nutmeg
Salt and pepper to taste
1/4 cup pasta water (reserved)
Directions:
Season the steak cubes with salt, pepper, and smoked paprika.
In a hot skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
Add the steak bites in batches, searing each side for 1-2 minutes until browned and cooked to your liking. Remove and set aside.
In the same skillet, lower the heat and add the remaining butter and garlic. Cook for 1 minute until fragrant. Return steak to the skillet and toss to coat in the garlic butter. Sprinkle with parsley.
Meanwhile, cook the spaghetti according to package instructions. Reserve 1/4 cup of pasta water before draining.
In another saucepan, heat olive oil and sauté garlic until soft. Pour in heavy cream, Parmesan, nutmeg, salt, and pepper. Simmer for 2-3 minutes until slightly thickened.
Add drained spaghetti and pasta water to the sauce. Toss until evenly coated and creamy.
Plate spaghetti and top generously with garlic butter steak bites. Serve hot.
